The Art of Carnitas & Homemade Tortillas

Adult / Culinary -
2026-2027 CE School Year

Crispy, golden-edged carnitas with juicy, melt-in-your-mouth centers—this is what taco dreams are made of. Join this chef-led, hands-on cook-along and create a full-flavored carnita feast from scratch in your own kitchen.

We will learn how to make tender, flavorful carnitas using an electric multi-cooker, along with the essential techniques and ingredients that make this mouthwatering melt-in-your-mouth dish so delicious. From there, we’ll make soft flour tortillas, and traditional corn tortillas from scratch, gaining the confidence to work with different types of dough. To complete the experience, we’ll prepare quick-pickled red onions that add the perfect bright, tangy contrast that brings everything together into the perfect bite.

While cooking-along is loads of fun, and highly recommended, it is optional.

On the menu: Multi-cooker Carnitas, handcrafted flour tortillas, handcrafted corn tortillas, and quick-pickled red onions.

Equipment Needs: Electric Multi-cooker (any brand), non-stick pan, stand-mixer with paddle & dough hook attachments (optional).

The registration fee covers immediate family members living in the same household only. If children are participating, adult supervision is required.

The week of class, you will receive an email with an ingredient and supply list, prep packet, and Zoom link. A few days after the class, you will receive an additional email with the recipes used during the session.

Tess Georgakopoulos

Tess Georgakopoulos has been cooking since she was roughly six years old -- well over forty years. Born into a Greek family, the art of cooking traditional meals using one's senses rather than recipes and measurements was passed on from one generation to the next. Her father was a trained chef who brought the magic of food to life in another form as they cooked elaborate family meals together. Food prepared from the heart, with one's own hands and creativity, was, and continues to be, an expression of love in her home. As a skilled home-cook and baker, Tess enjoys creating original recipes for her family and friends. She has recently started writing her first cookbook, and has a food blog in the works.
