    When it comes to sushi made with sushi-grade raw fish such as salmon or tuna wrapped in rice and seaweed, the sushi tolerance spectrum runs from a very strong “YES” to a very strong “NO” with little wiggle room in between. Enter these California “sushi” rolls! Join Tess as she walks you through making marvelous California rolls that will have you wondering why you haven’t tried to make your own before. California “sushi” roll combinations are limited only by your imagination! Make them vegetarian, with or without seaweed, spicy or mild -- it is totally up to you! Learn to how create delicious seasoned sushi rice and spicy mayo, and how to stuff, wrap, and shape the rolls. One of these fillings is a “crab” salad that will be created using imitation crab. Tess will also demonstrate plate decorating ideas! Ingredients/supplies for early shopping: Sushi rice, sushi nori/seaweed sheets, toasted sesame oil, (Japanese) rice vinegar. A bamboo sushi rolling mat can be helpful, but is not necessary.     What makes a focaccia a focaccia, a stromboli a stromboli, and a calzone a calzone? Discover the answer in this fun-filled cook-along class as we explore the world of unique rolled and stuffed pizzas and marvelous focaccia bread! Learn how to make homemade focaccia bread, a wonderful rolled pizza called a stromboli, and stuffed pizzas known as calzones, all with homemade pizza dough! Personalize your pizzas and focaccia bread with toppings and fillings of your choosing. On the Menu: Stromboli (rolled and filled pizza), calzones (stuffed pizza), wonderful focaccia bread, and an out-of-this-world pizza sauce. Two different types of dough will be used -- one for the pizza options, the other for the focaccia. Equipment Needs: A 9x13" non-stick baking pan or a larger sheet pan for the focaccia bread Additional sheet pans for the stromboli and the calzones A stand mixer is highly recommended to make the dough for both options during the class. Equipment: A Cakesicle silicone mold and popsicle sticks. Available at most craft stores, as well as online. Sticks are often included in the kit. A tart pan of any shape with removable bottom is needed for the French Fruit Tart. More details will be included in the ingredient list.   • Tantalizing Thai Cuisine

    Thai cuisine is a feast for the senses! It is flavorful, aromatic, and beautiful, with care given to the food's appearance and smell as well as texture and taste. This culinary experience begins with preparing Vietnamese summer rolls (fresh) served with both hoisin and peanut sauce for dipping. We'll move on to Vietnamese spring rolls with pork, turkey, and glass noodles stuffed in rice paper and fried crisp and golden. You'll then prepare Pad Thai, blending the vibrant flavors of Thailand with rice noodles, chicken breast, eggs, chilies, garlic, basil, scallions, bean sprouts, and more. Our final dish is Thai lime custard topped with fresh whipped cream. This class includes both demonstration and hands-on instruction. Many food items will be prepared in advance by the chef. This class is offered in collaboration with Osseo Community Education. Please note that it will be held at Osseo Middle School.

    Explore the world of sushi as you create this Japanese delicacy yourself. We'll start by preparing sushi rice, then move to the art of "nigiri-sushi"(hand-molded rice) topped with shrimp, unagi, tamago, ahi tuna, and more. Learn how to prepare "maki-sushi" using a bamboo mat to roll rice with various fillings in and around nori (seaweed sheets). Options and accompaniments include surimi, cucumber, avocado, cream cheese, teriyaki chicken, tempura onions, spicy mayo, eel sauce, wasabi, pickled ginger, and soy sauce. This class is in partnership with Osseo Community Education and is held at Osseo Middle School, 10223 93rd Avenue N, Maple Grove.
