Tex Mex Fiesta

In Spanish, “fiesta” means “feast”, and generally refers to a large party—and that’s exactly what you’ll experience in this lively, flavor-packed cooking class!

Our fiesta will start with savory empanadas, flaky pastries filled with seasoned beef, tomatoes, potatoes, and herbs. Next, prepare crispy flautas featuring chicken in a zesty jalapeño-garlic paste, rolled in corn tortillas and fried to golden perfection. You’ll then prepare authentic Mexican rice with onions, garlic, tomatoes, and fresh cilantro, along with Mexican-style street corn topped with lime aioli, a hint of cayenne, and Cotija cheese. 

For the main event, cook up sizzling fajitas with strips of tender marinated beef and chicken, sautéed with fresh bell peppers and onions, all wrapped in warm tortillas.

Finish this fiesta on a sweet note with a Yucatecan-inspired dessert—fresh coconut blended into a rich custard, baked in a wonderful nutty crust until caramelized and golden, and served with crème fraîche.

This class is offered in collaboration with Osseo Community Education. Please note that it will be held at Osseo Middle School.

Founder of "Flavors from the Home," Jeff's love of food began at the Lincoln Deli. He received formal training at L'Hotel Sofitel in Bloomington, MN and Houston, TX. His professional career spans over 40 years, and has taken him to such spots as Buca Di Beppo, Figlio, Sunsets on the Bay, My Pie Pizza, and the Sunshine Factory. Jeff has appeared on several cooking shows demonstrating his culinary wizardry; his passion is teaching and demystifying the process of gourmet cooking.
