MASTER CLASS: Easy as Pie! Crust, Fillings & Toppings for Delicious Desserts

Everyone has special memories of enjoying a freshly-baked slice of their favorite pie with fillings of fruit or berries, custards or creams, dressed with sugar and spice and wrapped in a perfect flaky or savory crust. Make the pies that create core memories for all who have the privilege of having a slice. This master class includes a bake-along option for two different pies with two methods for making a wonderfully flaky shortcut crust. The instructor will also demonstrate the creation of two additional pies. Discover different techniques for artfully constructing and decorating the top crust. Explore different types of pies and techniques, including filings, crusts, blind-baking, and much more.

Pie options for the class include Apple Cheddar, Cherry, Chocolate Pecan, Chocolate Cream, Lemon Meringue, Pumpkin, and Sour Cream Raisin. Two of these (one single-crust and one double-crust) will be selected for the bake-along portion of the class based on participant feedback. Your registration confirmation email will include a survey link to indicate your preferences. Results will help determine what pies will be featured in each segment of the class.

The registration fee covers immediate family members living in the same household only. If children are participating, adult supervision is required.

The week of class, you will receive an email with an ingredient and supply list, prep packet, and Zoom video conferencing link. Once this information is shared, no refunds will be issued. A few days after the class, participants will receive an all-inclusive and extensive packet with all recipes and information shared during the class.

Tess Georgakopoulos

Tess Georgakopoulos has been cooking since she was roughly six years old -- well over forty years. Born into a Greek family, the art of cooking traditional meals using one's senses rather than recipes and measurements was passed on from one generation to the next. Her father was a trained chef who brought the magic of food to life in another form as they cooked elaborate family meals together. Food prepared from the heart, with one's own hands and creativity, was, and continues to be, an expression of love in her home. As a skilled home-cook and baker, Tess enjoys creating original recipes for her family and friends. She has recently started writing her first cookbook, and has a food blog in the works.
