Enjoy a fun, interactive, virtual cook-along class with tips that take the 'air fryer hype' to new heights! On the Menu: Create the Copycat KFC®, doughnuts, and pizza with made-from-scratch dough. Tess will also demonstrate how to make her amazing air fryer burgers, give you tips for freezing pizza to stock your freezer, and share pointers on creating a mouth-watering chocolate glaze for the doughnuts.   • California Sushi Roll Extravaganza!

    When it comes to sushi made with sushi-grade raw fish such as salmon or tuna wrapped in rice and seaweed, the sushi tolerance spectrum runs from a very strong “YES” to a very strong “NO” with little wiggle room in between. Enter these California “sushi” rolls! Join Tess as she walks you through making marvelous California rolls that will have you wondering why you haven’t tried to make your own before. California “sushi” roll combinations are limited only by your imagination! Make them vegetarian, with or without seaweed, spicy or mild -- it is totally up to you! Learn to how create delicious seasoned sushi rice and spicy mayo, and how to stuff, wrap, and shape the rolls. One of these fillings is a “crab” salad that will be created using imitation crab. Tess will also demonstrate plate decorating ideas! Ingredients/supplies for early shopping: Sushi rice, sushi nori/seaweed sheets, toasted sesame oil, (Japanese) rice vinegar. A bamboo sushi rolling mat can be helpful, but is not necessary.     Let's cook up two delicious chicken dishes! Begin with bruschetta topped with fresh mozzarella cheese, Roma tomatoes, and sweet roasted bell pepper, sprinkled with fresh basil and drizzled with olive oil. Prepare Chicken Marsala with fresh sauteed mushrooms in a sweet Marsala butter sauce. See how that measures up against Chicken Limone topped with a chardonnay, lemon, and butter sauce with capers. Both entrees are served with Spaghetti Aglio Olio and tender garden vegetables tossed with olive oil, garlic, and Romano cheese. Finish with "Diplomatico," a divine combination of rum and espresso-soaked pound cake, rich chocolate mousse, and fresh whipped cream. This class includes both demonstration and hands-on instruction, with many food items prepared in advance by the chef. This class is offered in collaboration with Osseo Community Education. Discover the answer in this fun-filled cook-along class as we explore the world of unique rolled and stuffed pizzas and marvelous focaccia bread! Learn how to make homemade focaccia bread, a wonderful rolled pizza called a stromboli, and stuffed pizzas known as calzones, all with homemade pizza dough! Personalize your pizzas and focaccia bread with toppings and fillings of your choosing. On the Menu: Stromboli (rolled and filled pizza), calzones (stuffed pizza), wonderful focaccia bread, and an out-of-this-world pizza sauce. Join Chef Tess as she guides you through creating three exceptional confectionary delights: a classic French Fruit Tart, a version of a Greek Phyllo Pastry Tart called “Bougatsa”, and Cakesicles, a sweet treat that is the latest version of cake-on-a-stick. Equipment: A Cakesicle silicone mold and popsicle sticks. Available at most craft stores, as well as online. Sticks are often included in the kit.     Demystify the electric pressure cooker/multi-cooker called the Instant Pot® during a LIVE virtual class! Learn the foundations of cooking and care and how to make a few amazingly satisfying dishes in the Instant Pot. In addition to an Instant Pot® yogurt tutorial, Chef Tess will demonstrate breakfast, lunch, dinner, and dessert menu items, including Creamy Steel-Cut Oatmeal or Egg Bites, Creamy-Cheesy Tuscan Chicken with Penne, and luscious Lava Cakes or Dreamy Banana Bread.   • Sweethearts’ Delights: Elegant Éclairs & Paczki (Polish Doughnuts)

    Valentine’s Day is celebrated with sweets and chocolates gifted as an expression of love. Learn to make two dreamy sweets to share on Valentine’s Day -- a decadent French pastry, known as an eclair, filled with pastry cream and covered in chocolate ganache, and a rich yeasted dessert known as paczki (Polish doughnuts) filled with preserves or pastry cream. The steps for each will be simplified so that any home cook will be able to create professional-looking and -tasting desserts for Valentine’s Day, including making the choux pastry (pâte à choux), the sweet vanilla pastry cream filling, the ganache, and the wonderfully rich paczki dough. Both desserts will make for a very special and memorable Valentine’s Day! Equipment Needs: A stand mixer is highly recommended, as it may be difficult to keep up with the kneading of the dough, especially if making it for the first time.   • Tantalizing Thai Cuisine

    Thai cuisine is a feast for the senses! It is flavorful, aromatic, and beautiful, with care given to the food's appearance and smell as well as texture and taste. This culinary experience begins with preparing Vietnamese summer rolls (fresh) served with both hoisin and peanut sauce for dipping. We'll move on to Vietnamese spring rolls with pork, turkey, and glass noodles stuffed in rice paper and fried crisp and golden. You'll then prepare Pad Thai, blending the vibrant flavors of Thailand with rice noodles, chicken breast, eggs, chilies, garlic, basil, scallions, bean sprouts, and more. Our final dish is Thai lime custard topped with fresh whipped cream. This class includes both demonstration and hands-on instruction. Many food items will be prepared in advance by the chef.   • Tex Mex Fiesta

    In Spanish, the word "fiesta" means "feast" and generally refers to a large party! This fiesta begins with empanadas, pastries filled with beef, tomatoes, potatoes, and herbs. Flautas are next with chicken in a jalapeno-garlic paste and fried crisp in a corn tortilla. You'll then prepare authentic Mexican rice with onions, garlic, tomatoes, and fresh cilantro, along with Mexican-style corn with lime aioli, cayenne pepper, and Cotija cheese. Fajitas follow, with tender strips of marinated beef and chicken sauteed with fresh bell peppers and onions and wrapped in a warm tortilla shell. Finish this fiesta with a Yucatecan-style delight -- fresh coconut blended with rich custard in a wonderful nutty crust, baked to a caramelly brown, and served with crème frache.
